Ingredients
  

  • ½ onion (medium, chopped)
  • ½ green pepper (medium, chopped)
  • 1 garlic clove (pressed)
  • 15 oz black beans (rinsed and drained)
  • 15 oz diced tomatoes (undrained)
  • 8 oz tomato sauce
  • ½ tbsp chili powder
  • 1 tbsp cooking oil (for sautéing)

Instructions
 

Step 1: Sauté Aromatics

  • Heat 1 tbsp oil in a saucepan over medium heat.
  • Add chopped onion, green pepper, and pressed garlic.
  • Cook for 2–3 minutes until softened and fragrant.

Step 2: Combine Ingredients

  • Add black beans, diced tomatoes (with juice), tomato sauce, and chili powder.
  • Stir to combine.

Step 3: Simmer

  • Bring to a boil over medium heat.
  • Reduce heat, cover, and simmer for 30 minutes.

Step 4: Serve and Garnish

  • Serve hot.
  • Garnish with sour cream and fresh cilantro, if desired.
