Ingredients
  

  • ¼ cup butter ( or margarine, melted)
  • cups long-grain rice (uncooked)
  • 21 oz consommé (or broth)
  • ¾ cup green onions (chopped )
  • ¾ cup carrots (chopped )
  • ¾ cup celery (chopped )
  • ¼ cup almonds (sliced )

Optional:

  • ½ cup shredded cheese (for garnish)
  • ½ tsp salt (depending on consommé saltiness)

Instructions
 

Step 1: Preheat Oven

  • Preheat oven to 375°F (190°C).

Step 2: Sauté Rice

  • In a large skillet, melt the butter over medium heat.
  • Add the uncooked rice and sauté for about 5 minutes, stirring frequently until lightly golden.

Step 3: Combine Liquids

  • Add consommé and bouillon to the skillet.
  • Bring the mixture to a gentle boil.

Step 4: Bake the Rice

  • Pour the rice mixture into a baking dish.
  • Cover tightly with foil and bake for 30 minutes at 375°F.

Step 5: Add Vegetables & Almonds

  • Remove from oven and stir in the chopped green onions, carrots, celery, and sliced almonds.
  • Return to the oven for 10 more minutes, or until rice is tender and liquid is fully absorbed.

Step 6: Serve

  • Fluff the rice with a fork.
  • Garnish with shredded cheese if desired and serve hot.

  • Substitute margarine for butter as written if you prefer dairy-free.
  • Use slivered or sliced almonds depending on desired crunch.
