  • ½ tsp vanilla extract
  • cups shredded coconut

Instructions

Step 1: Make the Base

  • Mix ½ cup butter, ½ cup brown sugar, and 1 cup flour.
  • Press into a greased 8x13-inch pan.
  • Bake at 375°F (190°C) for 10 minutes.

Step 2: Prepare the Topping

  • While the base bakes, mix 1 cup brown sugar, 2 eggs, 3 tbsp flour, ½ tsp salt, ½ tsp vanilla, and 1½ cups coconut.

Step 3: Assemble and Bake

  • Pour the topping over the pre-baked base.
  • Bake at 375°F for 20 minutes longer, or until set.
  • (Optional) Add nuts to the topping if desired.

Tips

  • Add ½ cup chopped pecans or walnuts to the topping (the card suggests this option).
  • Use toasted coconut for a deeper, nuttier flavor.
  • Replace part of the brown sugar with white sugar for a lighter-colored topping.
  • Add ½ tsp almond extract to enhance the coconut flavor.
  • Press the crust firmly into the pan to prevent crumbling.
  • For chewier bars, bake the topping slightly less (17 to 18 minutes).
  • For crisper bars, bake the topping longer (22 to 24 minutes).
  • Add chocolate chips to the topping for a coconut-macaroon effect.
  • Cool completely before cutting for clean edges.
  • Line the pan with parchment paper for easy removal.
