Ingredients
  

  • 8 oz Semi-Sweet Chocolate (Baker’s)
  • cup light corn syrup
  • 2 cup heavy whipping cream
  • 1 cup walnuts (coarsely chopped)
  • 1 ½ cup chocolate wafers (crushed )

Instructions
 

Step 1: Prepare Muffin Cups

  • Line 12 (2 ½ inch) muffin cups with paper liners or small cups.

Step 2: Melt Chocolate Mixture

  • In a 3-quart saucepan, combine chocolate and corn syrup.
  • Stir over low heat until chocolate melts and mixture is smooth.
  • Remove from heat and stir in 1/2 cup heavy cream until blended. Let cool for 15 minutes or until thickened.

Step 3: Whip Cream

  • In a separate bowl, beat remaining heavy cream until soft peaks form.
  • Fold whipped cream into cooled chocolate mixture.

Step 4: Fill and Freeze

  • Spoon into muffin cups. Garnish with crushed wafers and walnuts.
  • Freeze 4–6 hours or until firm.

Step 5: Serve and Store

  • Serve chilled. Store in freezer up to 1 month.

Microwave Variation

  • Combine chocolate and syrup in a microwave-safe bowl. Microwave on HIGH (100%) for 1 minute. Stir, then microwave 1–1.5 minutes more until smooth.
