  • 1 ½ lbs chestnuts (or about 2 cups shelled chestnuts)
  • ½ cup butter (margarine, or turkey fat)
  • ½ cup milk
  • 7 cups dry bread cubes
  • 1 ½ tsp salt
  • ½ tsp black pepper
  • 2 eggs (slightly beaten)
  • ¼ cup cream

Instructions
 

Step 1: Prepare the Chestnuts

  • Using a sharp knife, cut a small slit in each chestnut.

Step 2: Roast the Chestnuts

  • Place the chestnuts in a 450°F oven.
  • Roast until the shells can be removed easily.

Step 3: Boil and Chop

  • Remove shells and skins from the chestnuts.
  • Cook the chestnuts in boiling salted water for about 20 minutes or until tender.
  • Drain and chop coarsely.

Step 4: Butter the Bread Cubes

  • Melt the butter, margarine, or turkey fat in a large skillet or saucepan.
  • Add the dry bread cubes and stir until the butter is fully absorbed.

Step 5: Season the Stuffing

  • Season the bread mixture with salt and pepper.
  • Add the chopped chestnuts and mix well.

Step 6: Add the Wet Ingredients

  • Combine the slightly beaten eggs, cream, and milk.
  • Pour into the stuffing mixture and stir thoroughly until evenly moistened.

Step 7: Stuff or Bake

  • Use the stuffing to fill a 9 lb turkey, or place in a greased baking dish.
  • Bake at 350°F for 35 to 45 minutes if cooking separately.
