  • ½ cup all-purpose flour ( or whole wheat flour)
  • 2 cups quick-cooking oats

Instructions
 

Step 1: Prepare Thickened Base

  • In a large saucepan, combine thawed apple juice concentrate and cornstarch.
  • Whisk until completely dissolved.

Step 2: Cook Mixture

  • Cook over medium heat until thickened.
  • Add lemon juice and cinnamon.
  • Stir well to blend.

Step 3: Add Blueberries

  • Remove from heat.
  • Add blueberries and toss to coat evenly.

Step 4: Make Crumb Topping

  • In a medium bowl, mix canola oil and honey until combined.
  • Add pecans, flour, and oats.
  • Toss until evenly coated.
