Ingredients

  • Oil – 1 tsp
  • Sesame Seeds
  • Onion – 1 cup, diced
  • Bay Leaf – 1
  • Celery – 1/2 cup, diced
  • Fresh Thyme, chopped
  • Fresh Parsley, chopped
  • Carrots – 1/2 cup, diced
  • Cloves – 2
  • Pepper Corns – 6 to 12
  • Whole Chicken

Instructions

  1. Put the oil in a pot and stir in sesame seeds.
  2. Mix the remaining ingredients into the pot (minus the chicken).
  3. Add wings, back, legs of chicken and simmer 2 hours for stock.
  4. Keep skimming off top.
  5. Simmer 4 hours for a sauce.
