Ingredients

  • Eggs – 3, slightly beaten
  • Milk – 3 cups
  • Sugar – 2 cups
  • Flour – 1/4 cup
  • Nutmeg – 3/4 tsp
  • Pink Rhubarb – 4 cups
  • 9″ Pie Shells – 2 uncooked
  • Butter – 1 Tbsp

Instructions

  1. OPTIONAL – Can substitute 2 cups of sugar with 3 or 4 envelopes of Equal.
  2. Beat eggs slightly and add milk.
  3. Mix in sugar, flour and nutmeg.
  4. Mix in rhubarb.
  5. OPTIONAL – Add some strawberries to the rhubarb.
  6. Pour into pastry shell and dot with butter.
  7. Cover with top pie crust.
  8. Slash the top crust enough to let out steam to hold down cooking over.
  9. Bake at 400° until nicely browned about 50 to 60 minutes.
