Ingredients

  • Flour – 1 cup
  • Oatmeal – 3/4 cup
  • Brown Sugar – 1 cup
  • Shortening – 1/2 cup, melted
  • Cinnamon – 1 tsp
  • Rhubarb – 4 cups, diced
  • Sugar – 1 cup
  • Water – 1 cup
  • Vanilla – 1 tsp
  • Cornstarch – 2 Tbsp

Instructions

  1. Combine first five ingredients to make a crumbly mixture.
  2. Press 1/2 in greased 9″ sq pan.
  3. Top with rhubarb.
  4. Cook sugar, water, vanilla, cornstarch and cook over low heat until thick and clear.
  5. Pour over rhubarb and top with remaining crumbs.
  6. Bake 350° for 1 hour.
  7. Serve with whipped cream and/or ice cream.
