Ingredients cake:

  • Yellow cake mix – 18 ½ oz pkg
  • Borden fresh or canned eggnog – 1 cup
  • Vegetable oil – ¼ cup
  • Eggs – 3
  • Rum – 2 tbs (or 1 tbs rum extract)
  • Nutmeg – ¼ tsp

Ingredients Frosting:

  • Cream Cheese – 8 oz
  • Sifted confectioners sugar – 1 lb
  • Eggnog – 1 ½ tsp

 

Instructions Cake:

  1. Preheat the oven to 350°F
  2. In a large mixing bowl combine the cake mix, eggnog, rum and nutmeg
  3. Beat at medium speed for 3 minutes.
  4. Pour into 3 well greased square pans.
  5. Bake for 20 minutes until toothpick comes out clean.
  6. Cool for 10 minutes.
  7. Remove from pan and add frosting.

Instructions Frosting:

  1. Beat the cream cheese until fluffy.
  2. Gradually beat in sifted confectioners sugar.
  3. Add the eggnog ½ tsp at a time.
